Potato Salad

Ingredients:


• 4 large potatoes
• 3 Tbls. finely chopped onion(optional)
• 2 large eggs
• 1/2 tsp salt
• 1/3 cup mayonaise
• 4 oz sweet relish
• paprika

Directions:


Boil the potatoes until they are done but do not overcook. If you overcook, they will still be alright, it might just be harder to cut into chunks.

Boil the eggs until hard boiled.

Allow the potatoes and eggs to cool. If you want to cool them fast, you can run cold water over them in a strainer.

Peel the potatoes and slice into 1 inch square chunks.

Peel the eggs and slice them into 1/2 inch pieces.

Combine all ingredients, except for the paprika into a mixing bowl. Stir together gently.

After all ingredients are well mixed, top with paprika.

Store in the refrigerator until ready to serve.
